Christmas is a perfect time for making cakes and cookies with your family. I love making Christmas cake. That smell of nutmeg, cinnamon and ginger spreading throughout your kitchen is amazing. It always reminds me of winter and its magic. My love for sweets made me share with you a recipe for coming holidays. It is a fruit loaf which is first of all a healthy cake, since it contains no sugar. It can be sweeten with maple syrup or honey and dried fruit which contain fructose. Maple syrup is an outstanding source of manganese, and contains calcium, potassium and zinc. It’s also rich with antioxidants. As someone who is eating healthy I only make cakes containing healthy sweeteners.
This loaf is delicious, and I think your family will enjoy it too. Once it finds its place on your holiday menu it will become one of your all time favorites. You can eat it in combination with a glass of white wine or with tea.
Ingredients
90 g unsalted butter
250 g dried fruit raise, orange etc.
250 g soft flour
1 egg
¼ teaspoon ground clove spice
¼ teaspoon ground ginger spice
¼ teaspoon ground cinnamon spice
4 spoon maltex or molasses or honey
¼ teaspoon baking soda
¼ teaspoon baking powder
Method
Place all ingredients into large bowl. Mix well. Take a kitchen cloth spread and sprinkle it with one spoon flour.
Place the mixture in a kitchen cloth. Make a ball and tie with the rope.
In a pot bring a good amount of water to rolling boil. Add a metal exactly on the bottom.
Drop the ready mixture in and cook them for about 2 hours. Get it out and leave for 5 minutes, then take off the kitchen cloth. Allow to cool on a rack. Place in a plate, and you can decorate with powdered sugar.
